Hormone-Balancing Breakfast Egg Bites

Ingredients:

  • 8 eggs

  • ¼ cup unsweetened plant-based milk

  • 1 cup baby spinach, chopped

  • ½ cup diced sweet potato

  • ½ cup crumbled goat cheese

  • ¼ cup diced red bell pepper

  • 2 tbsp chopped fresh parsley or cilantro

  • 1 tsp turmeric powder

  • ½ tsp Himalayan pink salt or sea salt

  • ¼ tsp black pepper

Instructions:

  1. Preheat your oven to 350°F (175°C) and lightly grease a 12-cup muffin tin with olive oil or avocado oil (both healthy fats that promote hormone production).

  1. In a medium bowl, whisk the eggs and almond/coconut milk until fully combined.

  1. Stir in the chopped spinach, sweet potato, red bell pepper, feta or goat cheese, parsley or cilantro, turmeric, salt, and black pepper.

  1. Divide the egg mixture evenly between the muffin cups.

  1. Bake for 18-20 minutes, or until the egg bites are set and slightly golden on top.

  1. Let cool for a few minutes before removing from the muffin tin. Serve warm or store in the fridge for up to 4 days.
