Blackened Chicken with Avocado Cream Sauce


1 ½ tsp paprika

1 ½ tsp ground cumin

½ tsp red pepper or cayenne

½ tsp onion powder

1 tsp black pepper

1 pinch salt

⅓ cup nonfat plain yogurt

1 cup raw, pureed avocado

1 ½ tsp lemon juice, raw

½ tsp garlic powder

1 ½ lbs boneless, skinless chicken breast


In small bowl, mix paprika, cumin, red pepper, onion powder, and salt and pepper, to taste. Rub over chicken breasts.

In large nonstick pan coated with nonstick cooking spray, cook chicken over medium-high heat, 5-7 minutes on each side until done.

In a small bowl, mix yogurt, mashed avocado, lemon juice, and garlic powder until creamy. Serve over chicken.

Prep time is 10 minutes, cook time is 15 minutes, Serves 4
