August 1, 2023 | Stephanie Ouellette Basil & Cherry Tomato Cannellini Ingredients: 1 cup cherry tomatoes ½ red onion, diced 4 Tbsp extra virgin olive oil 1 bunch fresh basil, chopped 2 – 15 ounce cans of cannellini beans, drained Splash of white wine Salt and pepper to taste Directions: Heat oven to 350 F. Put tomatoes, onions, and olive oil in a baking dish for about 20 minutes or until split and softened. While the tomatoes are baking, mix basil, beans, and wine in a separate bowl—season with salt and pepper. Combine bean mixture with baked tomatoes and place in the oven for about 10 minutes. Serve warm.
