Pom and Kale Salad

Pomegranate, White Bean, and Kale Salad With POM Vinaigrette

Preparation

For the Salad: Add the kale to a large bowl. Drizzle some extra-virgin olive oil over the kale and sprinkle with kosher salt. Massage with your hands until the kale softens – this helps break down the kale to make it more digestible and easier to chew.

Add in the white beans, POM Arils, avocado, and hemp seeds. Gently mix to combine.

For the Dressing: In a small bowl, combine the POM Juice, Dijon mustard, balsamic vinegar, honey, and salt. Slowly stream in the olive oil while whisking to emulsify the dressing. It should be smooth with no separation.

Pour the dressing over the kale and mix to incorporate. Adjust to taste with salt and pepper if needed. Divide into two bowls and serve immediately with a sprinkling of extra POM Arils on top and a few cracks of black pepper. Enjoy!
