Ingredients:
- 8 eggs
- ¼ cup unsweetened plant-based milk
- 1 cup baby spinach, chopped
- ½ cup diced sweet potato
- ½ cup crumbled goat cheese
- ¼ cup diced red bell pepper
- 2 tbsp chopped fresh parsley or cilantro
- 1 tsp turmeric powder
- ½ tsp Himalayan pink salt or sea salt
- ¼ tsp black pepper
Instructions:
- Preheat your oven to 350°F (175°C) and lightly grease a 12-cup muffin tin with olive oil or avocado oil (both healthy fats that promote hormone production).
- In a medium bowl, whisk the eggs and almond/coconut milk until fully combined.
- Stir in the chopped spinach, sweet potato, red bell pepper, feta or goat cheese, parsley or cilantro, turmeric, salt, and black pepper.
- Divide the egg mixture evenly between the muffin cups.
- Bake for 18-20 minutes, or until the egg bites are set and slightly golden on top.
- Let cool for a few minutes before removing from the muffin tin. Serve warm or store in the fridge for up to 4 days.
