Caramelized Onion, Goat Cheese, & Arugula Flatbread

1 tbsp unsalted butter

1 large RealSweet® onion, thinly sliced

⅛ tsp salt

1 tbsp veggie stock

1 premade thin-crust flatbread

2 tsp olive oil, divided

3 oz goat cheese

1 cup arugula

2 Tbsp balsamic glaze

Directions:

Preheat oven to 425°F.

Heat butter in a skillet over medium-low heat. Add onions and cook, stirring frequently, 3-4 minutes. Once onions soften and brown, sprinkle with salt and stir in vegetable stock. Cook for another 1 – 2 minutes and remove from heat.

Lay flatbread on a baking sheet. Brush with olive oil and top with caramelized onions and goat cheese. Bake 8 – 12 minutes until cheese melts and the crust is crisp. Remove from oven.

Toss arugula with olive oil, salt, and pepper. Top flatbread with arugula and drizzle with balsamic glaze.

Makes one serving.
