Turkey Breakfast Crumbles

Ingredients

1# ground turkey
2 Tbsp olive oil
¾ tsp onion powder
¾ tsp garlic powder
¾ tsp rosemary
¾ tsp oregano
¾ tsp sage
¾ tsp ginger
¾ tsp marjoram
¾ tsp thyme
¾ tsp pepper

Directions

In a medium bowl combine all ingredients except the olive oil.
Preheat olive oil in a large skillet over medium heat. Cook the ground turkey until browned and the juices run clear.

Step 2

Add 2 cups diced vegetables of choice into the meat mixture, my favorites include onion, red bell pepper, tomatoes, spinach, and mushrooms. Cook until slightly softened.

Step 3

Preheat the oven at 375 degrees. Spray 9×13 Pyrex pan with nonstick spray. Add 1 cup shredded hashbrowns to the bottom of the pan. Then layer the ground turkey/veggie mixture on top of the shredded hashbrowns. Then scramble 15 large eggs and pour egg mixture over the top of the meat mixture. Add ½ cup shredded sharp cheddar cheese to the top of the mixture. Bake at 375 degrees for 40  minutes or until the egg is fully cooked. Cut into 15 pieces for meal prep and/or freeze for later. Enjoy!

Each square is approximately one egg.
